Ask your butcher to cut the shin of beef into slices about 1 inch thick. Drain the pineapple rings, saving the juice aside. Brown the meat in a pan, in 1 oz of butter and the oil. As the meat is cooked, place it in a casserole, season with salt and pepper, add the pineapple juice. Add enough water to cover the meat. Cover and cook in the oven for approximately 3 hours, on 350 F. Ten minutes before the meat is done, sweat the chopped shallots in the remaining butter, add the pineapple rings and brown. Remove the meat casserole from the oven, garnish with the pineapple and place back in the oven to finish cooking. Serve with Creole rice.
